Mandarin and Basil Sangria
1/4 cup water
1/4 cup sugar
10 basil leaves
1 bottle sauvignon blanc
1 blood orange, sliced into thin rounds
1 cara cara, sliced into thin rounds
1 tangelo, sliced into thin rounds
1 handful strawberries, sliced
8 Fresh Tudsbury Mandarins
1 meyer lemon, skin peeled into strips and added - save juice for another use
1/4 cup brandy
1 cup blood orange Italian soda
1/4 cup tangerine juice
In a small saucepan combine the water and sugar over high heat. Bring the mixture to a boil and stir until the sugar is dissolved. Turn the heat off and add the basil leaves. Stir the simple syrup to combine and let the basil leaves sit for 20 minutes while the mixture cools.
Meanwhile, in a large pitcher, combine the white wine, italian soda, citrus slices, strawberries, meyer lemon skin, brandy and tangerine juice. Stir to combine. Add the cooled basil simple syrup and stir. Let the sangria hang out for about 1 hour and then serve over ice.
Mandarin Vodka Cocktail
1 Tudsbury Mandarin Orange
2 jiggers (3 ounces) Clementine Vodka
1 jigger (1.5 ounces) Grapefruit Juice
Muddle ½ the Mandarin orange in bottom of a cocktail shaker.
Add 3 ounces Clementine Vodka and 1.5 ounces grapefruit juice.
Add ice; shake.
Pour into martini glasses and garnish with a sprig of mint and a slice of Mandarin orange.
2 cups of Tudsbury Mandarins squeezed, from about 8-10 mandarins (depending on the size)
¼ cup fresh lime juice
1 cup sugar cane juice (guarapo), or ½ cup simple syrup/sugar, adjust to taste
8 oz of mint leaves
~1 ½ cups of chilled sparkling water or club soda, adjust more or less based on your preference
1 to ½ cups of rum, adjust to taste
Sugar to decorate rims, optional
You can make the mojitos in individual glasses or in a pitcher. Then in each glass, I place ice cubes, mint leaves and fruit slices, pour the drink into the glasses and then top it off with some sparkling water. Gently muddle or crush the mint leaves with the sugar cane juice (or sugar or simple syrup). Add the rum, lime juice, and mandarin juice, mix well and taste. Add sugar or rum if needed – remember than you will still add sparkling water. Add a few ice cubes and some mandarin slices. Then top off with the sparkling water and mix gently. As mentioned above, to serve in each individual glass: put ice cube in the glass, then add some fresh mint leaves and mandarin slices, and pour the drink into the glasses. Top off with additional sparkling water or club soda if needed.
